Winemaking Notes: A select parcel of fruit was used to make this Shiraz grown by a renowned Riverina grower. The grapes were crushed and destemmed before being transferred to an open top fermenter. The wine was fermented under temperature controlled conditions ensuring the temperature remained low resulting in a slow fermentation. The fruit was pumped over 3 times daily every 8 hours to ensure maximum exposure to skins and seeds to get the good depth of colour and tannin profile we see in this wine. The wine was then pressed and transferred for secondary fermentation and oak maturation. The wine matured in oak for 3 months before being fined and filtered prior to bottling.
Colour: Medium Purple
Nose: Strawberries, plum and vanilla dominate the nose. A pleasant spice aroma makes itself known, blending so well with an apparent subtle nuttiness.
Palate: Cranberries and plum invigorate the palate. The wine is so delicately layered and textured, evenly balanced with a solid acid structure and fine tannins. Spices of pepper and cinnamon further add to the layered complexity of this wine.
