TASMANIA WILD BILTONG

Brief

The word biltong is from the Dutch bil (“rump”) and tong (“strip” or “tongue”). Biltong is a variety of dried, cured meat that originated in Southern Africa. Various types of meat are used to produce it, ranging from beef and game meats to fillets of ostrich from commercial farms. It is typically made from raw fillets of meat cut into strips following the grain of the muscle, or flat pieces sliced across the grain. It is similar to beef jerky in that they are both spiced, dried meats. The typical ingredients, taste and production processes differ, the main difference being that biltong is dried and subsequently sliced whereas jerky is sliced prior to drying.

Clayton Waters, the founder of Tasmania Wild, grew up in South Africa, where Biltong originated from.

Using spice combinations and recipes handed down over generations, Clayton has perfected the craft of producing biltong that delivers honest and robust flavours that can only come from a wild environment.

On a holiday to Tasmania in 2013 Clayton and his family were captivated by the sheer beauty of Tasmania and the pristine landscape that creates the perfect environment for producing the highest quality of biltong. Four short months later they had re-located to Southern Tasmania and ever since they have worked tirelessly to bring their dreams to fruition.
